Bowfin, better known by its Cajun name "Choupique", is a species of fish as ancient as the sturgeon, surviving for many millions of years around the bayous of modern day Louisiana and other American swamps. The fish has hardly changed over millions of years of existence, but the popularity of its caviar has grown greatly in more recent year. This bony fish yields small, black, sometimes red-tinted roe that makes a good, far less expensive substitute for sturgeon caviar. When malossol cured with low salt, it is highly regarded by connoisseurs for its intense earthy and distinctive flavor, with mild tang and hints of spice.
