I found out that Olive Garden restaurants use Romano cheese, not Parmesan, in their cheese graters. I like Romano in general because it has a little bit sharper taste than does Parmesan. I love this Company because they vacuum-pack the cheese is 2 pound blocks, they put 5 ice gel-packs around the cheese, then place it all in a one-inch thick Styrofoam box. They seal the Styrofoam, then put it in a USPS Priority Mail carton, which they seal tightly around the Styrofoam box. It was sent from California to Appalachian Virginia in 2 days, and the gel packs and the cheese were still cold. I have found that I can freeze these 2-pound packs, take one out of the freezer as needed, cut it into chunks, feed it to the food processor, and have wonderful grated cheese. If I can't use it all within 4-6 weeks, I can even put the unused portion into a freezer bag, vacuum-seal it, and put it in the freezer for a little bit later. I'm sure there are folks who are gasping for air at the thought of re-freezing anything, but hey - it works for me. And I'm not telling anyone else what to do; I'm writing only about what I do. I notice no loss of taste or texture, and I get to use ALL my Romano without worrying about spoilage. I highly recommend this product.
