Mix with sour cream to make a terrific dip for chips Cut potatoes in wedges. Toss with a small amount of olive oil and sprinkle on the Datil Jerk Seasoning. Bake at 450 degrees F for 35-40 minutes or until potatoes are baked and crispy.

Make a Bourbon Jerk Glaze by combining cup bourbon, cup packed brown sugar, cup apple juice or water, and 1-2 teaspoons of Datil Jerk in a small saucepan. Heat to boiling, then reduce heat and simmer. Pour over grilled fruit and ice cream.
