Fourme d'Ambert is a cow's milk cheese and thought to be one of the oldest cheeses produced in France, made in the Monts de Forez of Auvergne. The wheels of Fourme d'Ambert are aged in dark damp caves for at least two months before they arand hints of fruit. This is a wonderful melting cheese and is widely used in savory souffl e;s which are classic French dishes. Crumbles of Fourme d'Ambert are also welcome additions to any cheese board or salad. If you are looking for a wine pairing, opt for a wine of medium body, reds and whites are both complimentary depending on the way you use the cheese.
