Preparation and Cooking Instructions: Stove Top: Boil 2c rice in 5c of water (or stock). Stir, cover, reduce heat to LOW and SIMMER for 50 minutes. Convection Oven: Mix 5lb rice and 5 qt water (or stock) in a 4" hotel pan. Cover with foil. Bake in a convection oven at 350 for 1 hour and 20 minutes. Spoon rice into 2 large sheet pans to rest at room temperature. Season with Kosher salt. Once cool, transfer the rice to a storage container and refrigerate. For each serving, heat rice in a pan with butter or olive oil. Serving Suggestions: Add wild rice to salads, pilafs, stuffing, soups, and veggie burgers.
