Preparation and Cooking Instructions: Stove Top: Boil 2c rice in 5c of water (or stock). Stir, cover, reduce heat to LOW and SIMMER for 50 minutes. Convection Oven: Mix 5lb rice and 5 qt water (or stock) in a 4" hotel pan. Cover with foil. Bake in a convection oven at 350 for 1 hour and 20 minutes. Spoon rice into 2 large sheet pans to rest at room temperature. Season with Kosher salt. Once cool, transfer the rice to a storage container and refrigerate. For each serving, heat rice in a pan with butter or olive oil. Serving Suggestions: Add wild rice to salads, pilafs, stuffing, soups, and veggie burgers. Mix with nuts, dried fruits, herbs, pesto, or gremolata for inspired side dishes. Serve with meat, turkey, game, or fish.
