It is stone ground from an heirloom open pollinated non-GMO yellow dent corn variety named Henry Moore grown on our small family farm. It was raised on our farm using organic methods on ground in a three year transition to certified organic. It's a somewhat coarse yellow cornmeal that can be used in baking cornbread or grits and other baking uses. The whole kernel, germ included, are left in for better taste and nutrition; though it does then need to be refrigerated (or frozen) if stored for an extended period of time Allergy notice: We use the same machinery to grow and process corn, wheat, soybeans, oats, sunflower, buckwheat and peas.
