Flaked corn or maize is often called for in USA beer clone recipes, especially American pilsners, cream ales and light lagers. Used to increase gravity while producing a drier crisper beer with light body and color. Does not require milling and should be added directly to the mash without first using a cereal cooker. Pre-gelatinized for higher yield and a more trouble-free brew than conventional flaked corn. The starch content contributes alcohol and the corn imparts a sparkle, roundness, and golden quality. Can be used for up to 40% of the grist. 89.9% extract. 50 lb bag, Product of USA, brand is Briess or Bunge Ceratex as available.
