Description
- Broccoli Rabe (or Rapini) are a variety of turnip typical of the Salento region. They are a staple of the Apulian tradition, being an integral part of the Apulian identity as well as a main ingredient of many typical dishes.
- Following I Contadini growing technique, the Broccoli Rabe are picked from the same plant more than once, cutting the greenest, most tender shoots. They only select the best ones, which have thin, firm stems, closed florets and no yellow parts, with a consistent bright green color. They then completely remove all of the leaves and use just a minimum part of the plant, which they wash, blanch and bottle in extra virgin olive oil, completely by hand.
- I Contadini Broccoli Rabe are jarred with a touch of garlic and chili pepper, and then preserved with only natural ingredients using lemon and cider vinegar. Savor the authentic goodness of this vegetable straight from the jar, or enjoy them as a side dish, in your salads and pasta, and obviously with Orecchiette, in one of the most iconic dishes of the Apulian cuisine, the Orecchiette with Cime di Rapa.
