Long known for both its nutritional and medicinal properties, this dry ingredient is high in fiber, protein, potassium, Vitamin D, and Iron, and adds a mild, earthy flavor to soups, salads, stir fried dishes, and pasta sauces. Dried, shredded wood ear is easily reconstituted by soaking in water, and is low in both calories and fat. Sometimes called "Jelly Ear," this mushroom is a common substitute for the more expensive Cloud Ear, which is from a related, but different, family of black fungus.
