Description

Add to mash for unique rye spiciness. A part of any great rye whiskey. Adds body and head retention. Brings a crisp and slightly spicy character with flavor notes of wintergreen and spice, without adding too much body or mouthfeel. Because coarse flakes have a large surface area and are pre-cooked, they hydrate and disintegrate quickly. Filtration time will be normal. Pregelatinized coarse rye flakes have been produced specifically for brewing, developing characteristics necessary for easy and efficient use. The process of gelatinizing makes the starches readily soluble and digestible by the naturally occurring enzymes in barley malt. This allows the flakes to be incorporated directly into the mash with other grains. Can be up to 10% of grist, up to 40% as a cereal adjunct to create Rye Beer.
