North Carolina Country Ham Center Cuts (8 oz package) and our complete pancake mix. Our ham is sliced thin and ready for you to fry up some for breakfast. Select the pancake flavor your prefer and all ingredients are included in the mix. Country cured meat is a process of rubbing it with salt, and sugar, and other spices creating that distinctive taste that can only be described as Country Ham or Country Cured Bacon. The best Country Ham originated as a method to preserve meat for the winter when the family farms of Appalachia did not have electricity and refrigeration. While most people purchase the ham or bacon for the salty taste and richer flavor, you can reduce the salt by soaking the ham, bacon slices or ham slices in water before cooking
