It works well to blend oil and water and other ingredients that don't stick together on their own. Use lecithin for making salad dressings and as an egg replacer in homemade mayonnaises. It is used in bakery items to keep the dough from sticking, and to improve its ability to rise. It produces a tender texture in baked goods especially in whole grain breads. It also extends the shelf life of homemade breads.
