A rose hip is the fruit of the rose bush, also called a haw. The hips form after the flowers have been pollinated in summer and reach full maturity in late fall. In fact, they are best harvested immediately after the first frost. Whole rose hips, are abundant in vitamin C, are used to make rose syrup, cordials and wine. They are also combined with other herbs in tea blends.
